Ingredients

  • Brown rice, cooked 400g
  • Chickpeas, drained 240g
  • Spinach, fresh 120g
  • Olive oil 2 tbsp
  • Lemon juice 2 tbsp
  • Fresh parsley 30g

Instructions

  1. Rinse and cook brown rice according to package directions until tender. Spread on a tray to cool slightly.
  2. Drain and rinse chickpeas. Pat dry and toss with half the olive oil in a pan over medium heat for 4 minutes.
  3. Wilt spinach in the remaining oil for 1 minute, then remove from heat.
  4. Combine rice, chickpeas, and spinach in a large bowl. Drizzle with lemon juice and fold in chopped parsley.
  5. Divide into serving containers and store refrigerated for up to three days.
