Ingredients
- Brown rice, cooked 400g
- Chickpeas, drained 240g
- Spinach, fresh 120g
- Olive oil 2 tbsp
- Lemon juice 2 tbsp
- Fresh parsley 30g
Instructions
- Rinse and cook brown rice according to package directions until tender. Spread on a tray to cool slightly.
- Drain and rinse chickpeas. Pat dry and toss with half the olive oil in a pan over medium heat for 4 minutes.
- Wilt spinach in the remaining oil for 1 minute, then remove from heat.
- Combine rice, chickpeas, and spinach in a large bowl. Drizzle with lemon juice and fold in chopped parsley.
- Divide into serving containers and store refrigerated for up to three days.
